This is a vegetarian, Kosher-for-Passover mock kishka, a sausage-like traditional Ashkenazi Shabbos dish. To make it meaty, schmaltz (rendered chicken fat) can be substituted for the oil.
INGREDIENTS
- 4 celery stalks, chopped
- 2 carrots, chopped
- 1 medium onion, chopped
- 1 tsp paprika
- 1 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 tsp salt (non-iodized if for Passover)
- 1 cup water
- 2 cups matzo meal (or more if too wet)
- 1/2 cup safflower oil
- Aluminum foil
Preheat oven to 350 degrees Fahrenheit.
Add vegetables to food processor. Pulse until combined, and transfer to medium bowl. Mix in matzo meal, oil, spices, and water. Combine with spoon.
Cut strips of foil approximately 12″ x 16.” Spoon one-third of mixture into the foil. Shape into a loaf and roll up to resemble a sausage link. Twist ends of foil to seal.
Place sausages on a baking pan, and bake for 45-50 minutes. Remove foil and serve with gravy or with cholent.
